GRADING DUCK EGGS-This is usually where the USDA comes in and assigns egg grades but so far they do not require this for ducks.

HOW FRESH ARE YOUR EGGS?-As an egg ages its proteins in the albumen denature and become thinner and the yolk gets flatter and sinks into the white. A fresh egg has firm albumen and a full looking yolk that sits on top of the white, when cracked onto a plate the egg stays in a circle as opposed to running all over the plate. Candling the egg, or placing a very strong light behind the egg in dark conditions, is another effective way of evaluating its grade and freshness. The yolks will spin more freely and closer to the shell the older the egg and the air cell will move easier than it would if the egg white were thicker. A bad duck egg will have a neon yellow tinge to the white while a fresh egg will be perfectly clear. Note chicken eggs normally have a dull yellow color.

  1. The Chinese highly prized Duck eggs and for good reason when dealing medicinally. All the Chinese doctors I know fully agree that two eggs a day is important to health and that vegan diets are not healthy. Do you want to argue with 6000 year old tried and tested knowledge?
